FACTORS AFFECTING PHIN COFFEE QUALITY
As I shared in the article on how to brew delicious coffee, the following factors will affect the quality of coffee brewed with a phin filter.

Water quality
I still recommend customers use quality water sources to brew phin coffee such as: bottled purified water, filtered water that has been treated with a specialized filter, tap water that meets the standards of the Ministry of Health, etc.
Avoid using well water with alum, untreated water because they contain heavy metals that greatly affect the flavor of the brewed coffee.
Water temperature
Temperature greatly affects phin coffee, especially when using pure coffee types like the ones we provide. Too high temperature can burn the coffee powder, causing the brewed coffee water to have a burnt taste.
The ideal temperature for brewing phin coffee is about 90 degrees C.

Coffee blooming method
Blooming coffee for too long is also a reason leading to brewed coffee water having a burnt smell. Blooming too long causes the hot water to continuously contact the coffee powder for an extended period, burning the acids in the coffee. Therefore, when brewing phin coffee with pure roasted coffee types, blooming for too long is not necessary. The blooming time should only be about 20 seconds.
Coffee powder pressing method
Pressing the coffee powder too tightly makes the extraction speed slower, and in many cases causes the coffee to burn. Therefore, just shaking lightly is enough for the coffee powder to be evenly distributed in the phin. According to my experience, on average the extraction time for 1 small phin coffee is about 2-3 minutes to meet requirements.

HOW DO ALUMINUM PHIN AND STAINLESS STEEL PHIN AFFECT COFFEE
As shared above, using which type of phin only affects the water temperature throughout the extraction process. Besides that, it does not affect the quality of the extracted coffee water at all.
In this case, I assume that these 2 types of phins both use quality materials and do not release any other substances during the phin coffee brewing process.
So how do these 2 types of phins affect temperature. Theoretically, stainless steel has lower heat conductivity than aluminum, so during the phin coffee brewing process, the temperature inside the stainless steel phin will be maintained at a higher level than the aluminum phin.
Assuming the initial water temperature of both phins is equal, with the same amount of coffee powder. Then we can conclude that the stainless steel phin heats the coffee powder longer, so it tends to make the brewed coffee water more bitter. While the aluminum phin has the temperature inside the phin decrease faster, so the brewed coffee is less bitter.

SO WHICH IS BETTER FOR BREWING COFFEE: ALUMINUM OR STAINLESS STEEL PHIN
Theoretically, we have seen that using aluminum phin or stainless steel phin does not alter the coffee at all, it only affects the temperature. And adjusting the temperature so that the coffee is less bitter or more bitter can be completely done through the experience of the brewer.
Therefore, depending on each person’s preference, they can use aluminum phin or stainless steel phin. Currently, these types of phins are manufactured very sophisticatedly and beautifully. Not simply just a coffee brewing phin but also a decorative object.
